Vegetarian Huevos Rancheros

Makes: 1 serving (two portions)
Ingredients:
- 2 tbsp (30 ml) olive oil
- 2 slices country bread
- 1 large ripe avocado from Mexico, peeled and pitted
- ½ cup (125 ml) drained and rinsed white beans
- ½ lime, juiced
- Salt and pepper to taste
- Salsa to taste
- ½ cup (125 ml) grated sharp cheddar cheese
- 2 eggs
- Chopped cilantro
Directions:
- Heat olive oil in a pan over medium-high heat and toast the slices of country bread.
- Create guacamole by mashing ripe avocado, white beans, lime juice, salt and pepper in a bowl.
- Spread the guacamole on the toasted bread, add salsa and sprinkle with grated cheese.
- Cook sunny-side-up eggs in the pan and place them on top of the toasts. Add more salsa if desired.
- Sprinkle with chopped cilantro and indulge in this Mexican breakfast delight.
