Québécois Ham Carbonara

Serves: 4 people
Ingredients:
- 1 13 oz (375 g) package of Maple Leaf Original bacon, diced
- ½ lb (250 g) Maple Leaf Original Natural smoked ham, diced
- ½ lb (250 g) spaghetti noodles
- 1 tbsp (15 ml) olive oil
- 2 garlic cloves, minced
- 1 tbsp (15 ml) butter
- 1 large egg
- 2 egg yolks
- 1 cup (250 ml) grated Parmesan cheese
- ¼ tsp (1.25 ml) black pepper
- parsley, to garnish
Directions:
- In a medium saucepan with lid, cook spaghetti as per the instructions on the box. Reserve ½ cup (125 ml) pasta water, then drain the pasta. Keep warm.
- In a medium skillet, heat up olive oil. Add diced bacon and ham and cook until crispy. Add butter and let melt.
- Add minced garlic and sauté for 30 seconds. Add cooked spaghetti to the skillet and toss well with bacon and ham.
- In a small bowl, whisk together egg, egg yolk and Parmesan cheese. Slowly add to the pasta, mixing vigorously so the egg won’t scramble.
- Add retained pasta water a little at a time, whisking well until the sauce becomes creamy.
- Season with black pepper, chopped parsley and grated Parmesan cheese, then serve.
